Avocado Soup

If you are looking for something different, then this would be the way to go.   And it’s pretty too!

  •  Avocado Soup
  • 2 large ripe avocados
  • 1 1/4 cups sour cream
  • 4 cups chicken stock
  • 1 clove garlic, crushed
  • small bunch fresh cilantro
  • fresh ground black pepper

 

1. Cut the avocados in half, remove the peel and lift out the stones.  Chop the flesh coarsely and place it in a food processor with 3-4 tbsp of the sour cream, and the crushed garlic.  Process until smooth.

2. Heat the chicken stock in a pan.  When it is hot, but still below simmering point, stir in the rest of the cream.

3. Gradually stir in the avocado mixture into the hot stock.  Heat but do not let hte mixture approach boiling point.avocado-soup-close-up1

4. Chop the cilantro.  Ladle the soup into individual heated bowls and sprinkle each portion with chopped cilantro and black pepper.  Serve immediately.
