Shari’s Chili Chicken Soup

I love soups!!  I created this one the other night, when my cupboards were looking a little empty, and I craved something comforting that the children would also enjoy.  It was a hit the whole family.  My husband preferred to eat his without the cheese, sour cream or chips on top.sharis-chili-chicken-soup

 

 

2 bonless chicken breasts

1/2 cup water

1 tbsp chili powder

1 small sweet onion, chopped

1 – 4oz. can mild green chilies

1 – 28oz can diced tomatoes

1 – 14oz can red kidney beans

1 cup chicken broth (add more or less depending on how brothy you like your soup)

fresh cilantro to taste

1 cup frozen sweet corn (optional)

grated jack cheese

sour cream

tortilla chips, crushed

 

1. coat chicken breasts in chili powder, and brown in heavy non-stick stock pot.  Once browned, add water to pan, stirring up browned bits off the pan, cover and simmer until chicken is thoroughly cooked.  remove chicken from pan and set aside.

2.  add onions to pan and slowly cook until transparent.  Add chilies.  Cook together for 5 mins.  Meanwhile, Dice chicken.  Add to onions and chilies.

3.  Add tomatoes, kidney beans and chicken broth.  Bring to low boil, reduce heat to low boil then simmer for 20 mins.   

4. Add cilantro  (and optional corn).  Return to low boil, then simmer for 5 minutes longer. 

5. Serve with a sprinkling of cheese, a small dollop of sour cream, and a few crushed tortilla chips.

and then…

So I seem to be developing an interest in not only cooking great food, but photograhping it as well.

Passions

Someone asked me recently what I’m passionate about.
Hmmm…

I answered at first with the obvious… my God, my husband and my children.

Hmmm…

I really had to think after that. There are many things that I like, there are some things that I love, but what am I passionate about? What makes me feel the most content, excited and fulfilled all at the same time?

Acting. I love to be onstage and try to bring a character to life. It’s been a long time since I have been on a stage, and acting is a bit of a ‘use it or lose it’ talent. I am determined to get on stage in 2009. Been to one audition, for which I did not get a part. But, I am not ready to give up. More auditions are on my calendar. =)

Cooking. Although I don’t enjoy it the same since I have gone back to work full-time, and dealing with cooking for a family of 6, all with different tastes, I truly to still love to cook, when I get to expirament, and try new things and new ingredients. Day to day cooking… meh, whatever. Creating food to entertain and delight others who truly appreciate it… ya… that’s the stuff! I would love to take some classes, and get an opportunity to spread my wings in the kitchen!

My camera. I don’t claim to be a photographer, I just love taking pictures of things in my world and finding those pictures that make me go… ooohhhh.

Others.  I also enjoy card making, crocheting, reading and time with my loved ones!
